While i just lost 3 min, i can't imagine how annoying it would be on hardcoreDigging no longer is in the game so that option is cut off. But you could try building nearby the Seamoth (save before attempting) to see if you can "dig" that way. Keep in mind this will permanently alter the terrain. Try using a Mobile Vehicle Bay underwater and putting it somewhere that makes it stuck (like under a piece of metal debris or something) and climb onto it.
